Gluten & Dairy Free Protein Pancakes

Good Morning! I wanted to do something different from a protein smoothie today, so I decided to make my own protein pancakes! 

Completely dairy & wheat free, let’s get started:

  • 1/2 cup of oats, ground into flour
  • 1/4 cup almond milk
  • 2 eggs
  • 1 TB peanut butter
  • 1 banana
  • 1/2 scoop of raw vanilla protein powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp Coconut Oil, melted
  • Toppings: strawberries & lactose free earth balance butter

METHOD

  1. In a food processor or blender, grind the oats into a flour.
  2. On a plate or cutting board, take a fork and mash the banana to form a soft paste. Add into the flour mix.
  3. Add the almond milk, eggs, cinnamon, peanut butter, vanilla extract, and protein powder.
  4. Oil a skillet with coconut oil and heat over medium heat. Pour the batter into onto the skilled, using approximately 1/2 a cup per pancake.
  5. Allow the pancake to sit until you see bubbles forming, then flip it and allow to cook on the other side until golden brown.
  6. Repeat for the rest of the batter and serve with maple syrup.

This definitely satisfied my sweet tooth while still getting sufficient morning protein. I hope you enjoy! Let me know if you have any other gluten/lactose free recipes that taste amazing!
