Good Morning! I wanted to do something different from a protein smoothie today, so I decided to make my own protein pancakes!
Completely dairy & wheat free, let’s get started:
- 1/2 cup of oats, ground into flour
- 1/4 cup almond milk
- 2 eggs
- 1 TB peanut butter
- 1 banana
- 1/2 scoop of raw vanilla protein powder
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tsp Coconut Oil, melted
- Toppings: strawberries & lactose free earth balance butter
METHOD
- In a food processor or blender, grind the oats into a flour.
- On a plate or cutting board, take a fork and mash the banana to form a soft paste. Add into the flour mix.
- Add the almond milk, eggs, cinnamon, peanut butter, vanilla extract, and protein powder.
- Oil a skillet with coconut oil and heat over medium heat. Pour the batter into onto the skilled, using approximately 1/2 a cup per pancake.
- Allow the pancake to sit until you see bubbles forming, then flip it and allow to cook on the other side until golden brown.
- Repeat for the rest of the batter and serve with maple syrup.
This definitely satisfied my sweet tooth while still getting sufficient morning protein. I hope you enjoy! Let me know if you have any other gluten/lactose free recipes that taste amazing!
