This easy recipe is bound to make anyone’s day that much brighter, especially if you’re having a bit of a tweet tooth morning like I was today! When was the last time you had gluten free/dairy free french toast? I honestly have never had it anywhere other than Casa de Murphy, which is fine because I believe they are meant to be a homely meal!
Growing up, I remember that French Toast was our special occasions breakfast. For Valentine’s Day or a special birthday breakfast before school, Mom would get up early and make it just for us. I can smell the sugar-loaded Mrs. Butterworth’s now… Of course, this was pre-intolerances when the bread was white and the milk was cow’s. We both can no longer have dairy, and because of all those years of her doing simple sweet things for us like this, I decided to make HER some ole french toasties – the pain free kind!
This is the same batter she always used for us, except I made it dairy free:
Ingredients
- Canyon Gluten Free Bread (the best kind right here)
- 2 eggs
- 1 tsp cinnamon
- 2 TBSP dairy free milk (like Lactaid milk or Moo-topia)
- Optional toppings: Earth Balance Butter, Maple Syrup, powdered sugar, etc.
Instructions
- In a mixing bowl, add eggs, milk, and cinnamon. Whisk until smooth.
- In a skillet, melt butter until bubbly.
- Place one side of the bread into the whisked mixture, let soak for a second, then flip to get the other side equally soaked. Put into skillet until desired doneness then flip – same as you would with pancakes.
- Serve immediately with powdered sugar, maple syrup, dairy-free butter, or any other sweetener you like.
