Sweet Potato Pizza Bites

Pinterest found but Kate (dairy free & gluten free) modified, sweet potato pizza bites are now a thing! An awesome snack, these MUST BE EATEN IMMEDIATELY if you make them. They will NOT be good the next day, as the sweet potato may become too mushy! 😦

Let’s get started on this easy recipe:

Ingredients

  • 1 large or 2 small sweet potatoes
  • 5 TBSP marinara sauce
  • 1 Tsp olive oil
  • 1 cup shredded mozzarella by Go Veggie! (dairy free found in HEB or Whole Foods) 
  • 15 Pepperoni slices, about 2 ounces

Instructions

  1. Preheat oven to 450 degrees F and LIGHTLY olive oil down a cookie sheet.
  2. Wash and trim the sweet potatoes, and cut them into 1/2 inch slices. You should have about 15 slices.
  3. Place them on the cookie sheet and sprinkle with salt and pepper. Bake for 15-20 minutes or until the bottoms have browned and the potato slices are almost crispy. I like mine to have some crunch.
  4. Remove them from the oven and top each slice with the 1 tsp of marinara sauce, then add cheese and top with a pepperoni. 
  5. Place the tray back in the oven and bake until the cheese is molten and the edges are even more crispy.  About 5-8 minutes.
  6. Serve immediately!
