I have been looking for a wonderful alternative for homemade cheesy, floury quesadillas, and have finally found it! I took the skeleton from vegetarian times quesadillas and made them my own! You may of course add chicken or whatever meat you like to these, but personally I believe they are good enough on their own!
Here we go:
Ingredients
- Udi’s gluten free flour tortillas (found in Whole Foods)
- 1 onion, chopped
- 1 can of black beans, drained
- A bunch of cilantro, chopped
- Cooked brown rice
- Avocado, chopped (1/2 avocado per large quesadilla)
- Tomatoes, chopped (same as above)
- Finlandia Gouda Sliced Cheese (dairy free found in HEB)
- Earth Balance Buttery Spread (dairy free found in HEB or Whole Foods)
Instructions
- In a large skillet, melt a teaspoon of butter. Lay in the tortilla and on one side of the large tortilla, add all (and as much) of the ingredients you want except the cheese. On the other side, add the cheese and let it get hot.
- Let the tortilla get nice and crispy and then fold the tortilla in half so that the cheese side ends up on top of the beans, rice, tomatoes, etc. It should stick. Press down on the quesadilla with the spatula. Continue to let it sit there to get hot all the way through, adding more butter if you want it to get crispier.
- Cut in half and serve immediately!
So yummy, creamy, and cheesy. Enjoy! ❤
