Ever since I was little, this soup has been a part of the family night. It makes a huge pot, which is definitely needed for my family of 5, and lasts for days as the best leftovers. The only problem was, it was not gluten free. So, when I hit age 15, taco soup was no longer an option. Obviously, my entire family concluded this was blasphemy so my mother took it upon herself to find an amazing gluten free alternative to make it taste just right. Low and behold, she succeeded.

Although it is summer, I still love this meal at any time of the year. It is that good. Dairy free and gluten free soups don’t come around that often, which is why I like to make the most of them. Of course, you can alway wait until it’s winter to make something like this, but I’m just special and like mine in the summer and some of you might as well! To each their own!
Let’s get started: There are three parts to this soup. For the taco seasoning and ranch dry mix, you will notice a duplication of ingredients. Yes, it is supposed to be that way to compensate for the dairy and gluten freeness of this meal, so follow suit!
Ingredients
- 1 large chopped onion
- 1 lb. of organic, grass fed ground beef
- 1 can of pinto beans
- 1 can of great northern white beans
- 1 can of corn
- 1 can of hominy
- 1 can of rotel tomatoes
- 1 can of diced tomatoes
- 1 box of chicken broth (32 oz.)

Taco Seasoning
- 1 TBSP chili powder
- 1/2 tsp garlic powder
- 1/8 or less red pepper
- 1/4 tsp oregano
- 1 1/2 tsp cumin
- 1 tsp sea salt
- 1 tsp black pepper
Ranch Dry Mix
- 2 heaping tsp of dried parsley
- 1 tsp pepper
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried thyme
Instructions:
- In a large stovetop pot, brown the meat with the onions until onions clear and meat no longer pink. Add in the canned goods, then everything else (taco and ranch seasoning included).
- Let sit, stirring occasionally, for at least 1 hour, letting all the flavors mix.
- Serve hot with chips and cheese.
I know, at a glance, the recipe looks daunting. There are lot of little ingredients, but I promise this taco soup will not let you or your family down. It is a crowd pleaser and I can 100% guarantee that!
