Healthy Protein Power Balls

Quick little post for today! These are perfect for a grab and go snack. Pinterest found, but Kate modified to be dairy and gluten free, this is worth making.

Here we go!

Ingredients:

  • 2 cups Bob’s Red Mill gluten free oats
  • 1 cup all natural almond or peanut butter (or nut butter of your choice)
  • 1/2 cup unsweetened finely shredded coconut
  • 1 scoop of your favorite vanilla protein powder (I use Raw Vegan Vanilla)
  • 1/8 cup ground flax
  • 1 cup mix-ins (Enjoy Life mini chocolate chips, dried fruit or chopped nuts are good)
  • 2/3 cup raw local honey
  • 2 Tbsp chia seeds

Method: 

  1. Mix all ingredients together well in a medium bowl.
  2. Roll oat mixture into pin pong sized balls. You may need to shape with your fingers as dough can be sticky.
  3. Set on parchment paper in a resealable container.
  4. Place in fridge to set, about 20 min.
  5. Makes 3 dozen balls.
