Roasted Root Veggies

Perfection in all it’s greatness = this dish.

I don’t even want to say anything about it, just make them and find out for yourself why I am obsessed.

Ingredients

  • 1/3 cup apple cider
  • 1 Tbsp. apple cider vinegar
  • 1/4 cup brown sugar
  • 3 parsnips, peeled & cut into 2 inch pieces
  • 1 onion, chopped
  • 3 carrots, peeled & cut into 2 inch pieces
  • 2 red potatoes, quartered
  • 1 turnip, peeled & cut into 2 inch pieces
  • 4 cloves of garlic, peeled
  • 3 Tbsp. olive oil
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. each salt & pepper

Instructions

  1. Preheat oven to 400 degrees F. Line a large sheet pan with foil and set aside.
  2. In a microwave safe bowl, combine apple cider, apple cider vinegar, and brown sugar. Microwave on high 1 minute. Set aside.
  3. Toss veggies and garlic in a large bowl with olive oil, cinnamon, salt, and pepper. Pour onto prepared sheet pan and toast 30 minutes.
  4. Remove from oven and drizzle with apple cider glaze. Bake an additional 15 minutes or until golden brown and fork tender.

Obviously, I would not eat this on a night or day that I am not working out because of all the carbs! Just a side note – but do enjoy this easy dish! ❤
