By detoxdiy, I love this recipe! It is tangy, herbal, and just the right amount of creamy. I was feeling very bloated from this weekend’s cheat days, so I definitely needed something just like this to cleanse my system. Fun fact: Turmeric is an anti-inflammatory! How cool is that?? I have bad knees, so I definitely could use more turmeric in my life.. what about you? 🙂
This meal is easy and cheap to make, so let’s get started:
Ingredients
- 1 small onion, chopped small
- 5 oz cherry tomatoes
- 2 cloves of garlic
- 1/2 cup chicken broth
- 1 can of diced tomatoes with their sauce
- black ground pepper and sea salt
- 1 1/2 tsp ground turmeric powder
- 4 fresh basil leaves
- 1 TBS apple cider vinegar
- 1 TBS olive oil
- optional toppings: nuts and seeds
Instructions
- Add chopped onions and garlic to pan with olive oil. Cook for one minute.
- Add in turmeric, salt, and pepper and cook until onions are clear. Add cherry tomatoes, canned tomatoes, apple cider vinegar, fresh basil and chicken broth and bring to a boil.
- Cover and set to simmer for 5 minutes. Remove and pulse in a blender until creamy and smooth. Add in nuts and serve.
Super easy and really good! I can see adding some gluten free bread with this.. yeah, I can see that.
