This is one of my favorite recipes in the whole world. Everyone loves it! It’s only 5 ingredients, super easy, and crockpot friendly.
On that note, GET A CROCKPOT!! They will save your life. Just throwing stuff in there (usually) turns out delicious.. unless you really are trying to make something disgusting.. don’t do that. But seriously, they can change your whole day. The way I do it is by sacrificing a little bit of sleep time to get up and get the cooker going. The night before, I meal prep by chopping whatever needs to be chopped, measure out the spices and insert into a baggie, then set the crockpot right on the kitchen counter. This way, when I wake up, I can literally just throw everything in the pot right there, hit cook for 7-8 hours, then come home to absolute aromatic bliss. Food’s ready for me, I was able to hit the gym after, and life is good on a Monday. When does that ever happen? Yeah, my point exactly.
The best part about this recipe is that it really is only 5 ingredients, but with recommended toppings, we are looking at around 8 ingredients. The toppings are what make it complete, and after making this dish so many times, the best toppings are lactose free cheese, gluten free chips, and diced avocado. Hands down.
Ingredients
- 6 cups chicken broth
- 2-3 uncooked chicken breasts
- 2 (15-oz) cans Great Northern beans, drained
- 2 cups salsa verde
- 2 tsp. ground cumin
- optional toppings (strongly recommended): diced avocado, shredded cheese (The LF cheese brand that goes really well with this is Daiya: Mozzarella style found in Whole Foods) crumbled tortilla chips
Instructions
- In a crockpot, put all ingredients, except for toppings, in the pot to cook on high for 4-6 hours or low 8-10 hours.
- About an hour before it is done, take the chicken breasts out and shred them with two forks. Put them back in the cooking time is up.
- Add toppings and you’re done!
Enjoy the leftovers too because those spices have really have a chance to mesh and meld together. You will not regret making this – I guarantee it.
