Another Treebeards favorite of mine, this meal will last you throughout the entire week. It is certainly not at the top of my list of “healthiest things ever,” but it can be good if you are trying to gain muscle weight like me!
There’s no doubt that regular mayo is brimming with fat. One cup contains 1440 calories, 160 grams fat, and 24 grams saturated fat. It is an excellent source of vitamins E and K, but it also contains almost 50 percent of your daily recommended amount of sodium. So, I recommend using the “low fat” or “egg free” versions of mayo.
This dish is great by itself, or served on a piece of (gluten free) toast!
Ingredients:
- 2 hard boiled eggs, chopped
- 1 cup seedless red grapes, halved
- 1 cup chopped celery
- 1-2 cups of whole almonds
- 1 cup of cooked chicken (I shredded a rotisserie chicken)
- salt and pepper
- 1/2 cup mayo (I used Hampton Creek Just Mayo)
- (optional: red apples, chopped)
Instructions:
- Place all ingredients in a medium bowl. Add salt and pepper to taste and more mayo if necessary only until chicken just barely holds together. Chill before serving.
Double this if you think that you will just love it and want to eat it for every meal of your life (I promise you will feel so inclined).

The first time I had ‘hot’ chicken and grapes in a white sauce, it was so delicious. I have never tried this combo in a cold salad. Such a creative idea. I will be sure to make this one. Thank you so much!!!

I used green grapes for the ‘hot’ chicken version. I suspect it does not really matter. I like the red for the salad. It goes well with the green celery. Cheers!
