Cashew Butter on Toast

Happy Memorial Day! I hope everyone is taking the time to appreciate our veterans and those who serve our country. This is my “toast” to all you men and women who grant us our freedom each and every day.

Made with only cashews and agave nectar, this spread is creamy, light, and fluffy, yet filling.  Great as a spread for bread or a dip for apples, this is very simply to do. In the picture below, I added cinnamon and honey and it was a perfect snack to hold me over until my next meal.

To make this easy, what you really need is an immersion blenderYou can find them anywhere online, but here is a decent priced one on Amazon.

Ingredients

  • 2 cups of cashews
  • 1-2 tablespoons of agave nectar
  • 1 tablespoon of water (add only if need to help loosen the texture)
  • toppings: fruit, chocolate hazelnut spread, cinnamon, honey, etc.

Instructions

  1. Overnight, soak the cashews in a medium bowl filled with water to the top. Cover if you want, but otherwise just let it sit on the counter for at least 12 hours.
  2. Drain and put soaked cashews in the immersion blender and blend until creamy, adding agave nectar for taste and water for texture.

Done! Very easy and can be quite messy. Careful with the blender – I found out the hard way that things can come right out of there and hit you in the face haha!  Again, you can put this spread on gluten free bread, or apples, or cheese, or whatever you want that might sound tasty to you.
